Interview with Sublime Doughnuts’ Kamal Grant

I caught up with Kamal Grant, the owner of Atlanta’s hottest doughnut shop Sublime Doughnuts several months ago, and it was definitely a treat.  I have been waiting for the perfect time to post this interview, and this week seemed appropriate considering that I conquered my doughnut making issues earlier.  I am calling this week my :Ode to Doughnuts!”

With a slogan like “Eat One That’s Worth It”, you definitely understand that one of Kamal’s Sublime doughnuts is definitely worth the caloric splurge.  In 2012, Sublime was named “America’s Best Bakery” by Bake Magazine further confirming what all of Atlanta knew already: Sublime was leading the country in creating unbelievable doughnuts that are as equally unique as they are delicious.  Check out my interview with Kamal below to learn more about how he turned his passion into a true success.

What started your love of baking? 
I always liked to eat baked goods so I wanted to learn how to make them. Then, when I made them I realized they tasted much better fresh out of the oven.

What is your favorite dessert? 
Reeses Peanut Butter Cups.

What is your favorite cookbook for baking?
I really like Baking Illustrated. They always have an explanation behind their recipes- what led up to the recipe they came up with.
What interested you in doughnuts??  
Why doughnuts? Why not doughnuts? Doughnuts are delicious. They’re under-appreciated and can be made into something more memorable.

What has been your worst disaster in the kitchen? 
When I worked for another baker, I burned a whole batch of cheese straws and felt bad. So I bought a bunch of cheddar for the baker to make up for it.
How do you experiment or come up with recipes? 
With my years of training I think of the idea. I can see the flavors and have to figure out the perfect way to meld them together and how to incorporate each flavor and the processes to take.

What gives you inspiration in the kitchen? 
Everything I eat or have eaten in the past. There are ways to recreate flavors in different ways. I want to discover and incorporate those ways.
Why is dessert important? 
Because it makes us happy and brings us joy. Everyone looks forward to dessert. They’re happy when they eat desserts.
What is your baking philosophy? 
Make sure every ingredient you put in should be delicious then the total should be amazing.
